This is a fantastic opportunity for a culinary leader to take the reins in a venue known for its quality food, great beer, and memorable experiences.

Tuesday to Saturday roster – no late nights

We’re seeking someone with strong leadership skills, a flair for great pub-style food, and a desire to be part of a close-knit, supportive team.

Key Responsibilities

Inspire, lead, and develop the kitchen brigade—supporting their growth and professional development.
Maintain a safe and compliant kitchen in line with council regulations and internal policies.
Manage rosters efficiently to deliver high service standards while meeting wage budgets.
Deliver consistently high-quality food during both peak and off-peak periods—even in your absence.
Develop and refresh seasonal menus for both à la carte dining and functions.
Follow HR procedures around recruitment, onboarding, and performance management.
Work closely with the Venue Manager to support key functions, activations, and promotions.

About You

We’re after a passionate and driven kitchen leader ready to take ownership of day-to-day kitchen operations at the Carlton Brewhouse.


You bring:

A strong background in pub-style à la carte service and function catering
A knack for elevating the classics with fresh ideas and flavours
Experience leading and mentoring kitchen teams
A positive, solutions-focused attitude and a collaborative leadership style
Formal culinary qualifications
A love of great food, a strong sense of team, and an eye for quality

You’ll lead by example, bring energy and joy to the role, and foster great communication between the kitchen and front-of-house.
