About Doko
Chefs Patrick Pham and Daniel Lee have over 30 years of combined experience in Japanese cuisine and sushi. They established their culinary careers in Houston where they worked together for four years at an award-winning Japanese restaurant. Pham and Lee teamed up to bring new curated dining concepts to Houston’s food scene and kicked off a series of omakase pop-up dinners called Secret Taste. In 2019 Pham and Lee opened Kokoro Sushi and Yakitori in the Bravery Chef Hall in Downtown Houston, and following their success opened Handies Douzo shortly after along with Aiko & Himari. Doko is a chef-driven concept where Chef Patrick and Daniel will be showcasing their talent and creativity daily.
Job Purpose
Sushi Chefs/Line Cooks are responsible for preparing food to the specifications and standards set by the Chef team. Sushi Chefs/Line Cooks are expected to prepare food and set up stations in a quick-paced and hot environment.
Duties and Responsibilities
The primary job duties and responsibilities of a Sushi Chef/Line Cook include but are not limited to the following:
Prepare Japanese dishes according to established recipes and standards
Handle and prepare raw fish and seafood with precision and care
Create visually appealing and delicious sushi rolls, nigiri, and sashimi
Ensure all food is prepared in a safe and sanitary manner
Maintain cleanliness and organization of the sushi station and kitchen area
Collaborate with other kitchen staff to coordinate orders and ensure timely service
Conducts oneself at the highest level
Must adhere to sanitation, safety, and food regulations
Must maintain and uphold dress code standards
Performs other duties as assigned
Qualifications
Duckstache Hospitality requires the minimum qualifications to successfully perform the position of Sushi Chef/Line Cook.
Language:
Fluent speaking, reading, and writing: English and/or Spanish
Qualifications:
3+ years of relative experience
Strong knowledge of sushi preparation techniques and Japanese cuisine
Ability to handle knives and other sharp kitchen tools safely and effectively
Excellent attention to detail and presentation skills
Ability to work in a fast-paced environment while maintaining quality standards
Knowledge of food safety regulations and proper handling of raw fish
Know how to make maki
Comprehensive understanding of how to make sushi rice
Basic knowledge of fish
Texas Food Handlers certificate
Ability to memorize recipes
Flexible availability in scheduling
Capacity to multitask
Strong communication skills and ability to work well within a team
Working Conditions
The incumbent will be working in a restaurant setting, on the floor with guests, in the kitchen and dish area. Potential hazards include but are not limited to cuts, slipping, tripping, falls and burns. Frequent hand washing is required.
Physical Requirements
The incumbent is required to stand/walk for long periods of time. Incumbent is regularly required to talk and hear. This position is very active and requires the ability to lift up to 40 lbs. and be able to constantly move around in the restaurant.

Pay: $17.00 - $22.00 per hour
