Margot is a premium food, drink, and entertainment venue located on Belfast City Centre Donegall Square. Renowned for its stylish surroundings, impeccable atmosphere, innovative cocktails, and food offering. Opening in July 2025 Margot has become a destination venue for both locals and visitors alike.
We are now looking for a talented Head Chef who to take ownership of a growing food operation, influence menus, build a strong kitchen culture, and play a key role in the continued development of one of Belfast's most exciting hospitality venues.
Head Chef Margot:
Key ResponsibilitiesKitchen Leadership & Team Development
Lead, motivate, and develop a high-performing kitchen team.
Recruit, train, manage, and support kitchen staff.
Foster a positive team culture through leadership by example.
Manage performance issues and support team development where required.
Food Quality & Menu Development
Oversee all food preparation and service activities.
Ensure all dishes meet the highest standards of quality, consistency, and presentation.
Develop and refresh menus in line with customer demand, seasonal trends, and business objectives.
Approve and quality-check dishes before service.
Commercial & Financial Management
Produce effective staff rotas that balance operational requirements with wage targets.
Monitor labour costs and productivity.
Take ownership of stock control, ordering, stock rotation, deliveries, and supplier relationships.
Work closely with the company stock-taker to ensure accurate stock records.
Liaise with the accounts department to ensure invoices are submitted accurately and promptly.
Operational Excellence
Maintain excellent kitchen organisation and efficiency.
Plan equipment and ingredient requirements and identify shortages proactively.
Coordinate repairs and maintenance as required.
Work closely with management teams regarding functions, special events, seasonal menus, and promotions.
Compliance, Health & Safety
Ensure full compliance with all food hygiene, HACCP, health and safety, and licensing requirements.
Maintain accurate compliance records, including Kelsius reporting.
Ensure all cleaning schedules and kitchen hygiene standards are consistently achieved.
Monitor employee conduct, personal hygiene, and uniform standards.
Ensure company Standard Operating Procedures are followed and continuously improved.
Communication & Reporting
Work closely with the General Manager and wider management team.
Provide regular updates on kitchen performance and operational matters.
Attend management and company meetings as required.
The ideal candidate will have:
Previous experience as a Head Chef.
Strong leadership and people management skills.
Excellent knowledge of food safety, HACCP, and kitchen compliance requirements.
Experience managing stock, food costs, labour costs, and kitchen budgets.
A passion for delivering outstanding food and customer experiences.
Strong organisational and communication skills.
The ability to work under pressure in a fast-paced hospitality environment.
A hands-on approach with a strong work ethic and attention to detail.
