Gonzo izakaya has been 4 years and located on the beautiful west end of the city on college dovercourt. We are looking for a stunning culinary person to fit to the sous-chef position.
We are mainly doing Yakitori, Japanese small snacks (Otsumami).
We are aiming to bring the nostalgic feeling of Tokyo 1+80-+0's showa retro vibe.
Sous-chef will be mainly helping the chef to bring the best flavour of Japanese taste to Toronto.
Responsibilities
Assist the Head Chef in menu planning, food preparation, and presentation.
Supervise kitchen staff, providing guidance and training to ensure efficient operations.
Maintain high standards of food safety and sanitation practices in accordance with health regulations.
Oversee inventory management, including ordering supplies and minimizing waste.
Collaborate with the culinary team to develop new recipes and improve existing dishes.
Ensure timely service during peak hours while maintaining quality standards.
Monitor kitchen equipment and report any maintenance needs to ensure safe operation.
Foster a positive working environment that encourages teamwork and creativity.
Experience
Minimum 3 experience in the commercial food industry ( not the fast food industry) preferably in a supervisory role (CDP, Junior Sous, Senior Sous, or kitchen manager) within a kitchen setting.
Japanese kitchen / culinary / knowledge is a must.
Strong knowledge of food preparation techniques and cooking methods.
Familiarity with food safety regulations and best practices.
Excellent leadership skills with the ability to motivate and manage a diverse team.
Speaking Japanese is an plus, but not a mandatory.
Ability to work flexible hours, including evenings, weekends, and holidays as needed.
