Sous Chef - Quality Control (QSR): 30-35K P.M.
About the Role:
Nino Foods is one the leaders in the premium cloud kitchen segment in India. The role of Sous
Chef is to ensure best in class customer experience - which means uniform Product going from
all kitchens. The person must be able to create and implement SOPs , Training and Audit
mechanisms to ensure less than 1% of customer complaints .The candidate must have a deep
understanding of operational costs i.e Cost of Good Sold Utilities, Labor Cost overheads. The
candidate must show prior proven experience in creation and implementation of SOPs to reduce
Food Cost and Labor cost. The person must be good at using excel to analyze data and drive
best in class metrics like - Low Kitchen Prep time, High Food Rating and Less Order
Complaints.
Job Description
- Ensuring food rating is above 4.2 in all locations
-Create and implement Central and cloud Kitchen SOP’s and food handling processes
-Create and implement robust training programs for new and existing kitchen staff
-Control outlet level and city level labor cost and optimize labor allocation in the kitchens based
on order volume
-Control and Deeply understand Food cost and ability to tweak menu items to increase
profitability
-Optimize food ops metrics like Kitchen Prep time, Marking food ready accurately, Customer
complaints, etc
-Maintaining best in class quality, cleanliness and hygiene standards
-Technical knowledge of food handling, especially sensitive materials like different meats and
cheeses
-Planning of supply chain and material transfers based on demand forecasting
Job Requirements:
Zero to 1 Experience in scaling up cloud kitchen brands across Mumbai and beyond
5-8 years of food experience managing, training and hiring teams for cloud kitchens
Good with numbers and financial understanding of kitchen PNL and strong excel capability
Strong Doer mentality and ability to adapt in a fast moving environment
Experience with Pizzas, burgers and other continental food in the delivery format
