The Trustee for MRKC Family Trust is currently seeking experienced and enthusiastic Cooks and Chefs for multiple full-time positions at Mark and Vinny’s, a vibrant and contemporary venue located in Surry Hills, NSW 2010. Offering a competitive salary of $70,000 – $80,000 per annum plus superannuation, the Full-time package is negotiable for the right candidate.

Mark and Vinny’s is not your traditional Italian restaurant. Known for its bold take on modern Italian cuisine, the venue offers an inventive menu that seamlessly blends classic comfort with playful creativity—think vegan carbonara, blue spirulina pasta, and one of Sydney’s most impressive spritz menus. With a strong visual identity and cult following, the restaurant is as much a destination for food lovers as it is for social media fans.

Successful candidates will join a forward-thinking kitchen team that values innovation, inclusivity, and high standards in culinary execution.

SCOPE OF THE ROLE

Assist and oversee the preparation, cooking and presentation of all our innovative and mouth-watering culinary offerings, ensuring that the food you offer at the site is delivered to an exceptional standard across our menus and daily specials
Oversee and maintain kitchen inventory to ensure optimal stock levels, minimize waste, and support smooth kitchen operations.
Estimate the amounts and costs of required supplies, such as food and ingredients.
Inspect supplies, equipment, and work areas to ensure conformance to established standards.
Monitor sanitation practices to ensure that employees follow standards and regulations.
Analyze recipes to assign prices to menu items, based on food, labour, and overhead costs.
Collaborate with the Head Chef to plan and develop recipes and menus, taking into account factors such as seasonal availability of ingredients and the likely number of customers.
Demonstrate new cooking techniques and equipment to staff.
Manage kitchen staff and delegate tasks related to meal prep, cooking and delivering food to diners in a timely fashion
Oversee food preservation techniques such as freezing and storing to minimize waste and ensure food safety.
To be considered for this role, you should

Preferably have Certificates III IV in Commercial Cookery from Australia
Have at least 2 years of work experience as a Cook or Chef in a similar cuisine
Good knowledge of occupational health and safety (WHS) and HACCP.
Proven ability to thrive in team environments and perform effectively under pressure.
Excellent communication skills.
Be willing to relocate if you are interstate or in other cities.
