As a Commis Chef, you’ll work closely with the Chef de Cuisine in a fast-paced, hands-on environment that values precision, creativity, and a strong focus on safety and quality. The Commissary Kitchen is the beating heart of The Star—where every dish begins. Behind the scenes, this high-performance kitchen plays a vital role, supplying all our venues with top-quality prep, production, and service-ready items. A few of your responsibilities

Support or lead the assigned section as directed by the Chef De Cuisine and provide training to junior staff members
Assist with fundamental cooking and food preparation tasks
Maintain cleanliness of kitchen equipment and workstations
Complete all duties in line with company and statutory hygiene requirements
Meet requirements for consistency and high quality in a fast-paced environment

What are we looking for

Culinary School Graduate. Received apprenticeship training in commercial cookery
Proven experience preparing sushi and sashimi with speed, precision, and consistency in a fast-paced kitchen environment, ensuring the highest quality and presentation with every dish.
Proficiency with diverse food preparation techniques and cooking equipment
Successfully completed a Commercial Cookery Apprenticeship, gaining comprehensive knowledge of food preparation, particularly in café, hotel, or high-volume settings, along with strong communication skills and a solid understanding of relevant liquor laws
Flexibility to work a rotating roster, including mornings, evenings, weekends, and public holidays

You are passionate and creative, with strong sushi sashimi experience and a willingness to share your expertise to guide and support team members in the Commissary Kitchen. With excellent communication skills, you thrive in a collaborative environment, working closely with colleagues, management, and interacting with customers. You bring a proactive, positive attitude to every shift and are committed to delivering consistently high standards.

Your role will be pivotal to the success of The Star Sydney, where the Commissary Kitchen plays a key role in powering the culinary experience across the property.
