Chief Cook
Overview: In charge of the galley. As such the chief cook prepares the food for the crew. The chief Cook must ensure that the galley is kept in a constant state of cleanliness and that food hygiene respects the norms set by the industry and the national regulations
Key tasks responsibilities
The chief cook is responsible to the Camp Boss and any other duties and responsibilities as enunciated in the company Safety Management System (SMS) or instructed by the Chief Steward or the Master.
• Ensuring that the galley is operated in a safe and efficient manner
• Ensuring the timing and sequence of operations to serve the meals in a timely manner
• Ensuring that the galley and galley equipment is kept in a constant state of cleanliness and sanitation.
• Ensuring that the perishables are stored at the appropriate temperatures and in accordance with industry and regulatory standards
• Ensuring that the menus are properly varied and meet the recognized standards for well balance meals
• Ensuring that the principles of cooking are respected
• Ensuring that the food stock is properly rotated when new provisions are ordered
Prerequisites
• Be a Canadian citizen
• Possess a valid Canadian passport with an expiry date over six (6) months from the time of joining
• Possess a valid Transport Canada medical with a validity of six (6) months from the time of joining)
• Possess the required certification for the position held as per the Standards for Training, Certification and Watchkeeping (STCW) and the Manila 2010 amendments for a vessel operating in unlimited waters
• Obtain and hold an Enhanced Reliability security clearance. It is imperative to hold such security clearance as required by the Provision of Services contract between Federal Fleet Services and Her Majesty the Queen in right of Canada, represented by the Minister of Public Services and Procurement Canada
